Made by Seki Kanetsugu, founded in 1918 by a descendant of a swordsmith, this Santoku carries the tradition of Japanese sword-making into the kitchen. The blade is built from 33-layer VG10 Damascus steel for lasting sharpness and rust resistance, and the Micarta handle resists moisture, swelling, and wear — unlike many Japanese knives, this one carries real heft in the hand.
Best for: Everyday prep across meat, fish, and vegetables in one knife.
Not for: Frozen food or bones — the blade is built for everyday prep, not heavy-duty work.
