A hybrid all-purpose knife combining the flat edge of a Santoku with the angled tip of a Kiritsuke.

Made by Sakai Takayuki, the most renowned Damascus kitchen knife brand in Osaka, Japan, this Kiritsuke Santoku handles everyday prep just like a standard Santoku, with the added benefit of a pointed tip for detailed, precision work.

The blade is built from 33-layer VG10 Damascus steel, prized for its sharpness, excellent edge retention, and resistance to rust — easy to maintain without sacrificing performance. The handle is finished in mahogany wood with a tsuba collar that seals the gap between blade and handle, keeping the joint clean and preventing corrosion, a detail found on Sakai Takayuki's higher-end knives.

Best for: Everyday prep across meat, fish, and vegetables, with a pointed tip that's handy for detailed cuts and precision work.

Not for: Frozen food or bones — the thin VG10 edge is built for finesse, not heavy impact.
