Japanese Sujihiki Knife
A premium Japanese knife from Seki Kanetsugu’s renowned Zuiun series, originally created to celebrate the brand’s 100th anniversary. Known for its exceptional craftsmanship, the Zuiun series features a beautifully finished blade and handle, giving the knife a refined and luxurious feel.
The blade is made from 63-layer Damascus stainless steel with an SG2/Super Gold 2 core, one of Japan’s finest high-performance steels. It offers excellent sharpness, long edge retention, and strong resistance to rust, making it both beautiful and practical for serious kitchen use.
Best for: Pull and push slicing. The long, thin blade glides through items in a single stroke.
Not for: Heavy chopping or rocking motions. The blade is too long and fragile to be used on hard bones or for heavy-duty board work.
