A sharp, rust-resistant paring knife made from 33-layer VG10 Damascus steel with a beautiful Saiun finish.
Crafted by Seki Kanetsugu, one of Japan’s historic knife makers, this knife carries the tradition of Japanese sword-making into the kitchen.
The blade features a Hamaguri, or clam-shaped, edge for smooth cutting and long-lasting sharpness. Its Micarta handle offers a wood-like feel while resisting moisture, swelling, and wear.
Best for: Peeling, trimming, slicing small ingredients, and detailed decorative cuts.
